Banana-Orange Date Oats

2 cups orange juice
1 cup water
1/4 teaspoon salt (optional)
1/8 teaspoon ground nutmeg
1 1/2 cups oats, quick or old fashioned, uncooked
3/4 cup dates or raisins, chopped
1 medium-size ripe banana, mashed

In medium saucepan, bring orange juice, water, salt and nutmeg to a boil. Stir in oats and dates.
Return to a boil; reduce heat. Cook 1 minute for quick-oats or 5 minutes for old-fashioned-oats or
until most of liquid is absorbed, stirring occasionally. Stir in banana. Let stand until desired
consistency. 5 servings .

Orange Chicken with Rice

1 tablespoon canola or olive oil
4 boneless, skinless chicken breasts; cut in 1/2 inch strips
Lemon pepper seasoning
1/4 cup low−fat or fat−free ranch salad dressing
1/2 cup orange juice
1/4 cup low−fat mayonnaise
2 tablespoons brown sugar
1 cup instant rice
1 green pepper; julienned
1 can (11 oz.) mandarin oranges; drained

In a large skillet that has a lid, heat oil over medium heat.
Add chicken, cook and stir about 5 to 7 minutes. Sprinkle
liberally with lemon pepper while cooking. In a medium bowl,
combine mayonnaise, ranch dressing, orange juice, and brown
sugar. Stir mixture into chicken, mix well. Add rice and green
pepper; bring to a boil. Cook 5 minutes. Remove from heat and
add mandarin oranges. Cover and let stand 5 minutes.

Orange Marmalade

Ingredients:
  • 4 juicy oranges
  • 1 lemon
  • 1 white grapefruit
  • ½ cup (120 ml) white sugar for each cup of fruit juice
  • Angostura bitters
  • sterilized jars
Instructions:
  • wash fruit well
  • cut into halves (do not peel fruit!)
  • thinly slice fruit and remove seeds
  • measure fruit & juice
  • add 3 times that amount of water
  • soak 12 hours
  • bring to a boil, reduce heat, and simmer uncovered for 20 minutes
