1 lb cod (or other fish) fillet
1 Tbsp olive oil
1 tsp commercial spicy seasoning, salt free, or Hot ‘N Spicy Seasoning mix
as needed nonstick cooking spray
1. Preheat oven to 350 °F. Spray casserole dish with nonstick cooking oil spray.
2. Wash and dry fish. Place in dish. Drizzle with oil and seasoning mixture.
3. Bake uncovered for 15 minutes or until fish flakes with fork. Cut into 4 pieces.
Serve with rice.

Mediterranean Baked Fish
1 lb fish fillets (sole, flounder, or sea perch)
2 tsp olive oil
1 large onion, sliced
1 can (16 oz) whole tomatoes, drained (reserve juice), coarsely chopped
1/2 C tomato juice (reserved from canned tomatoes)
1 bay leaf
1 clove garlic, minced
1 C dry white wine
1/4 C lemon juice
1/4 C orange juice
1 Tbsp fresh orange peel, grated
1 tsp fennel seeds, crushed
1/2 tsp dried oregano, crushed
1/2 tsp dried thyme, crushed
1/2 tsp dried basil, crushed
to taste black pepper

Rockport Fish Chowder

2 C bottled clam juice
8 whole peppercorns

3/4–inch cubes

3 C lowfat milk

SPICY FISH SOUP

Ingredients:
1 whole red snapper weight of 600 grams cut into 3 parts
2 tablespoons lime juice
1 teaspoon salt
2 tablespoons cooking oil
3 cloves garlic crushed
1 liter of water
2 tsp salt
1 / 2 teaspoon pepper
2 tablespoons chili powder
1 tablespoon all-purpose seasoning (sour taste)
3 tablespoons fish sauce
2 leeks cut into 2 cm
100 grams of sliced radish matchsticks
2 carrots cut into matchsticks
3 sheets of white cabbage sliced 3 cm
25 grams glass noodles soaked in cold water until tender drain
1 piece of tofu cut into pieces
