2 Tbsp lowfat milk
4 tsp sugar
1 tsp vanilla
1 medium banana, cut in quarters
1 C plain lowfat yogurt
8 slices (1/4 inch each) banana
1. Place milk, sugar, vanilla, and banana in blender. Process for 15 seconds at high speed until smooth.
2. Pour mixture into small bowl and fold in yogurt. Chill.
3. Spoon into four dessert dishes and garnish each with two banana slices just before serving.

Celery with Cream Cheese Mousse
This delicious and light snack will please the young . . . and young at heart
¼ C low-fat whipped cream cheese
¼ C fat-free plain yogurt
2 Tbsp scallions (green onions), rinsed and chopped
1 Tbsp lemon juice
½ tsp ground black pepper
6 celery sticks, rinsed, with ends cut off
1 Tbsp chopped walnuts

Salmon Mousse
Ingredients:
- 1 large can (~ 420 gr net) of red salmon (not the cheap stuff)
- 4 sheets of gelatin (~ 7 gr)
- 20 cl mayonnaise
- 125 ml (1/8 liter) sour cream or crême fraiche
- 1 tablespoon dry white wine
- several drops of lemon juice
- 1 teaspoon fine mustard (not the yellow "hotdog" kind)
- 2 tablespoons finely chopped gherkins (or 1 tablespoon + 1 tablespoon capers)
- Worcestershire sauce
- cayenne pepper
- salt
