Apple, Brown Sugar, & Ham Pie
2 pounds cooked ham, in pieces
45 apples, peeled and sliced
1 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon pepper
1/2 cup butter
2 tablespoons lemon juice
1/4 cup apple cider
1 large egg
1/2 cup milk
1/2 teaspoon baking powder
3/4 cup flour
1 cup sugar

Eggs, Ham, & Hash Brown Pie
3 cups hash brown potatoes, frozen, shredded, thawed
5 tablespoons olive oil
1 cup ham, chopped cooked
1 cup sharp cheese, packed, shredded
1/2 cup red onion, chopped
1/2 cup green (bell) peppers, chopped
1/4 cup pimento, diced, drained
Mix together:
3 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Eggs, Hash Browns, & Ham Casserole
12 large eggs
1 cup cream
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup olive oil
1/2 teaspoon butter flavoring
2 cups hash brown potatoes, shredded, frozen, thawed
1 pound sliced ham, chopped
1/4 cup onion, chopped
1 cup sharp cheddar cheese, grated

Eggs, Ham, & Two Cheese Frittata
1/4 cup melted butter
1/4 cup all-purpose flour
1/4 teaspoon salt
4 eggs
1 cup cottage cheese
1 cup mozzarella cheese, shredded
1/8 cup green onion, chopped
1/4 cup diced ham
Preheat oven at 350Âș degrees F. Melt butter, then add flour and salt. Mix well, removing all lumps.
Beat in eggs and cheeses. Add all other ingredients. Pour into greased 6 x 10 inch baking dish.
Bake for 20-25 minutes for individual dishes and 40-50 minutes for single baking dish. Dish is
done when inserted knife comes out clean. Serve while hot and fluffy. Makes 6 servings .
