Apple-Raisin Scones

2 cups sifted all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup butter
1/4 teaspoon butter flavoring
1/2 cup milk
2 eggs, beaten
3/4 cup raisins
1/2 can apple pie filling
1/2 cup melted butter
1 tablespoon sugar


Preheat oven at 425° degrees F. Combine flour, sugar, baking powder, and salt. Using a pastry
blender, cut in 1/4 teaspoon butter until mixture resembles coarse crumbs. Add milk, eggs, and
raisins. Stir just until dry ingredients are moistened.
Grease an 8 inch round cake pan. With floured hands, pat half the dough into bottom of prepared
pan. Press dough 1/2 inches up sides. Spread apple pie filling on dough. Top with remaining
dough, spreading evenly. Using a sharp knife, score dough 1/2 inch deep into 8 wedges. Brush
top with melted butter and sprinkle with sugar. Bake 20-25 minutes or until golden brown. [By Janet Sue Terry]
