Make-Ahead Mashed Potatoes
Ingredients:
- 3 pounds (1.4 kg) medium sized potatoes, pared
- 1½ cups (360 ml) sour cream
- 4 tablespoons butter
- 1½ teaspoons salt
- ¼ teaspoon pepper
- ¼ cup (4 tablespoons, 60 ml) bread crumbs
- tablespoon melted butter
Instructions:
- Cook and drain the potatoes
- Combine potatoes, sour cream, the 4 tablespoon butter, salt and pepper
- Beat with electric mixer at low speed until blended
- Beat at high speed until light and fluffy
- Put lightly into a 2 quart ( 2liter) casserole, cover and refrigerate overnight
- Bake covered at 325 ºF (165 ºC) for 1 hour
- Toss bread crumbs in 1 tablespoon melted butter and sprinkle on top
- Bake 30 more minutes, uncovered
