Make-Ahead Mashed Potatoes

Ingredients:
  • 3 pounds (1.4 kg) medium sized potatoes, pared
  • 1½ cups (360 ml) sour cream
  • 4 tablespoons butter
  • 1½ teaspoons salt
  • ¼ teaspoon pepper
  • ¼ cup (4 tablespoons, 60 ml) bread crumbs
  • tablespoon melted butter
Instructions:

  • Cook and drain the potatoes
  • Combine potatoes, sour cream, the 4 tablespoon butter, salt and pepper
  • Beat with electric mixer at low speed until blended
  • Beat at high speed until light and fluffy
  • Put lightly into a 2 quart ( 2liter) casserole, cover and refrigerate overnight
  • Bake covered at 325 ºF (165 ºC) for 1 hour
  • Toss bread crumbs in 1 tablespoon melted butter and sprinkle on top
  • Bake 30 more minutes, uncovered
