Fancy Potato Rosettes Pommes de terre Duchesse, farcies de fromage

Ingredients:
  • potatoes or instant mashed potatoes
  • sour cream or crème fraîche
  • minced garlic
  • chopped or coarsely grated fresh cheese (sharp Cheddar, strong Gruyère, or Asiago cheese)
  • ground nutmeg
  • butter
  • breadcrumbs
  • optional: fried bacon bits
Instructions:

  • make mashed potatoes out of fresh potatoes or instant; make it thicker then for regular serving
  • blend in a couple of tablespoons of sour cream
  • blend in the minced garlic to taste (I use a lot)
  • blend in the grated cheese
  • blend in a good pinch of ground nutmeg
  • optional: blend in the bacon bits
  • use a pastry bag with a coarse bit, to make rosettes of the potato mix on a non-stick ovensheet; alternatively, use spoons to make nicely shaped mounds
  • melt some butter and mix in breadcrumbs
  • put some of the buttered breadcrumbs on top of each potato mound
