Eggs, Hash Browns, & Bacon Pie


6 slices of bacon, fry until crisp, crumble, set aside.
2 1/2 cups frozen hash brown potatoes, defrosted
1/2 cup onion, chopped fine
1/4 cup green pepper, chopped fine
8 large eggs, lightly beaten
1/4 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon thyme
1/4 cup milk
1 cup cheddar cheese, shredded



Preheat oven at 350° degrees F.
After frying bacon, set aside to use later. Mix with hash browns, onion, and pepper. Put into
greased 9 1/2 inch pie plate. Mix together beaten eggs, pepper, salt, thyme and milk. Pour over
hash brown mixture. Bake for 40-60 minutes. Remove from oven and sprinkle with cheese.
Return to oven for 5 minutes, remove and top with crumbled bacon. Serve immediately or keep
warm in oven until ready to serve. 4-6 servings.
