Eggs, Ham, & Hash Brown Pie


3 cups hash brown potatoes, frozen, shredded, thawed
5 tablespoons olive oil
1 cup ham, chopped cooked
1 cup sharp cheese, packed, shredded
1/2 cup red onion, chopped
1/2 cup green (bell) peppers, chopped
1/4 cup pimento, diced, drained

Mix together:
3 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper



Preheat oven at 425° degrees F. Press potatoes into bottom and up the sides on an un-greased
9 inch pie plate drizzled with olive oil

Bake for 25 minutes or until lightly browned. Cool. This crust can be frozen after baking.

Turn oven down to 375° degrees F. Layer the following ingredients from bottom up on crust, ham,
onion, peppers, and pimento cheese. Cover with milk and mixture. Bake for 35 minutes or until
top is firm. 4-6 servings.
