Makes 6 tacos
These tacos may be made with fresh or frozen tofu. Freezing tofu gives it a chewy texture somewhat like ground beef. To freeze tofu, place it in its package in the freezer. To thaw, place the package in the refrigerator. Once thawed, remove the tofu from its package and squeeze out the excess water.
2 teaspoons olive oil
1 small onion, chopped
1/2 small bell pepper, seeded and diced (optional)
1/2 pound firm tofu, crumbled (about 1 cup)
1 tablespoon chili powder
1 tablespoon nutritional yeast (optional)
1 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
1 tablespoon soy sauce
1/4 cup tomato sauce
6 corn tortillas
1–2 cups shredded lettuce
2 green onions, chopped
1/2 cup chopped tomato
1/3 cup salsa

Tofu Mayo
Makes about 1 1/2 cups
This low-fat mayonnaise substitute is made with silken tofu.
1 12.3-ounce package firm or extra-firm silken tofu
3/4 teaspoon salt
1/2 teaspoon sugar
1 teaspoon Dijon mustard
1 1/2 tablespoons lemon juice
1 1/2 tablespoons seasoned rice vinegar
Combine tofu, salt, sugar, mustard, lemon juice, and vinegar in a food processor or blender, and process until completely smooth, 1 to 2 minutes. Chill thoroughly before using.

Tofu Scramble
Makes 4 servings
1/2 cup vegetable broth, divided
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 cup chopped carrots
1 cup chopped fresh kale
16 ounces low-fat tofu, drained and crumbled
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried basil
Heat 1/4 cup broth in a skillet over medium-high heat. Add celery, onion, bell pepper, and carrots. Cook until softened. Add remaining 1/4 cup broth and kale. Cover skillet and cook until kale is wilted. Add tofu. Cook until firm and lightly browned. Add salt, black pepper, and basil.

TOFU SPINACH SOUP

Ingredients:
250 grams of spinach, sliced siangi
Eggtofu 2 pieces, cut into small dice
2 sticks of carrot, shaved
250 grams of meat snapper, sliced
1 liter of broth
1 tbsp cooking oil and 1 tbsp sesame oil
2 cloves garlic crushed
2 cm ginger crushed
6 pieces of fresh shitake mushrooms, sliced
2 tablespoons soy sauce
1 teaspoon salt and 1 / 2 teaspoon pepper
1 tablespoon cornstarch dissolved in a little water
3 eggs, beaten off
Topping: coriander leaves
