Sweet Potato Muffins

1 1/2 cups sifted all-purpose flour
1/2 cup sugar
1/2 cup sweet potatoes, cooked, mashed
1/2 cup walnuts, chopped
1/4 cup butter, melted
1/2 cup milk
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 egg
1 tablespoon sugar


Preheat oven at 400° degrees F. Grease bottoms only of 12 medium muffin cups, 21/2 x 1 1/4
inches. Mix all ingredients except 1 tablespoon sugar just until flour is moistened (batter will be
lumpy). Divide batter evenly among cups (about two-thirds full). Sprinkle 1/4 teaspoon sugar over
batter in each cup. Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.
Serves 12.
