6 eggs
1 cup shredded cheese
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce) frozen broccoli, thawed, drained, chopped
1 small onion, chopped
1/2 cup diced precooked red pepper
Mix eggs, cheese, salt and pepper. Add vegetables. Spray a 10 inch frying pan with cooking
spray and heat over medium heat. Add egg mixture. Cover and cook 9-12 minutes or until top is
set. Place onto serving platter. 6 – 8 servings .
