Curry Powder

Ingredients Hot Curry Powder:
  • ½ cup ground turmeric
  • ½ cup ground coriander
  • 5 tablespoons ground black pepper
  • 2 tablespoons ground cardamom
  • 1 tablespoon ground red pepper
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cumin
  • ½ tablespoon ground cayenne pepper
Instructions:
  • combine all ingredients in a bowl, and mix thoroughly
  • pack the powder into small jars and seal tightly
  • makes 1½ cups

Ingredients Mild Curry Powder:


  • ¾ cup coriander seeds
  • 2½ tablespoons dried chili peppers
  • 1 teaspoon saffron threads2 tablespoons poppy seeds
  • 2 tablespoons mustard seeds
  • 2 tablespoons cumin seeds
  • 2 tablespoons salt
  • 1 tablespoon garlic powder
Instructions:
  • put first 6 ingredients into a grinder, and whirl until pulverized
  • add remaining 2 ingredients and mix well
  • makes 1 cup

Ingredients Madras Curry Powder:
  • ½ cup coriander seeds
  • ½ cup dried red chili peppers
  • 5 tablespoons ground turmeric
  • 1 tablespoon black peppercorns
  • ½ teaspoon mustard seeds
  • ½ teaspoon fenugreek seeds
  • 6 whole cloves
  • 6 cardamom seeds
  • 2-inch (5 cm) stick cinnamon, broken into pieces
Instructions:
  • put all ingredients into a grinder, pulverize the mixture
