Apple Walnut Bread

3/4 cup vegetable oil
1/4 cup applesauce
3 eggs
1 3/4 cups white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup whole wheat flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 cups apples, peeled, cored and cubed
1 cup walnuts, chopped


Preheat oven at 300° degrees F. Lightly grease two 9 x 5 inch loaf pans.
In a large bowl, stir together oil, applesauce, eggs, sugar and vanilla extract. In a separate bowl,
sift together flour cinnamon, baking soda and salt. Gradually stir flour mixture into wet ingredients,
mixing just until combined. Fold in apples and walnuts. Pour batter into prepared pans.
Bake for 70 minutes, until a knife inserted in the center of a loaf comes out clean.
