1 head small cabbage, sliced thinly
2 medium tomatoes, cut in cubes
1 C radishes, sliced
1/4 tsp salt
2 tsp olive oil
2 Tbsp rice vinegar (or lemon juice)
1/2 tsp black pepper
1/2 tsp red pepper
2 Tbsp fresh cilantro, chopped
1. In large bowl, mix together cabbage, tomatoes, and radishes.
2. In another bowl, mix together the rest of the ingredients and pour over vegetables.

Fresh Farmhouse Cherry Kuchen
2 cups + 2 tablespoons sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking powder
3/4 cup butter cut in small pieces
1/2 cup sugar

2 pounds cherries
1 teaspoon fresh grated lemon peel
1 teaspoon cinnamon
6 tablespoons sugar
Whipped cream, if desired

Baked Chicken Breast with Fresh Basil
10 boneless skinless chicken breast (about 2 1/2 lbs.)
3/4 cup low−fat yogurt
1/2 chopped fresh basil
2 teaspoons cornstarch
1 cup bread crumbs
2 tablespoons grated Parmesan cheese
Arrange chicken in single layer in baking dish. Combine yogurt,
basil and cornstarch; mix well and spread over chicken.
Combine bread crumbs with Parmesan and sprinkle over chicken.
(If making in advance, cover and refrigerate for up to 6 hours.)
Bake chicken in 375 degrees oven for 30 minutes or until chicken
is no longer pink inside.
