Delightful Breakfast Burritos


1 pound bulk sausage, sweet or mild Italian
1/4 cup green pepper, diced
1/4 cup yellow pepper, diced
1/4 cup onion, diced
1 cup granny smith apple, diced unpeeled
6 eggs
1 1/2 cups cheddar cheese, shredded
8 soft burrito shells
1/4 cup olive oil
A jar of salsa
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
Sour cream
Lettuce



Cook sausage in skillet over medium heat until brown. Drain and keep warm. Sauté peppers,
onion and apple in 1 tablespoon olive oil over medium heat until they turn translucent (about 68
minutes). Remove from heat and keep warm. Scramble eggs and cook over medium heat.
Remove from heat and keep warm.

On soft burrito shell place equal amounts of cooked sausage, scrambled eggs and pepper
mixture in a narrow row at one end. Sprinkle with shredded cheese. Begin rolling the burrito shell
away from yourself. Lay each burrito on foiled lined baking sheet with seam side down. Sprinkle
tops with shredded cheese. Broil on low in oven on top rack until cheese bubbles and burritos
turn a golden brown. Serve on a bed of freshly chopped lettuce. Makes 7-8 servings.
