Peppi's Key Lime Pie

Ingredients:
  • 6 egg yolks (keep whites for meringue)
  • 1 can sweetened condensed milk
  • ½ cup key lime juice
  • 2 small baked pie shells, or 1 large baked shell
Ingredients for meringue:
  • 6 egg whites
  • ¾ cup powdered sugar
  • ¼ teaspoon cream of tartar
Instructions:

  • in small bowl, beat the egg yolks until lemon colored (about 5 minutes)
  • add the condensed milk and key lime juice
  • mix well
  • fold in 6 teaspoons of meringue mixture
  • pour into baked pie shell(s)
  • spread meringue on top
  • brown in a 325 °F (165 °C) oven for 10-15 minutes
  • Watch carefully after 10 minutes, as it can brown fast!
Instructions for meringue:
  • beat until stiff, but still moist: 6 egg whites
  • while beating, add (1 tablespoon at a time) the powdered sugar and cream of tartar [Christine Dörenberg]
