Ingredients:
- 6 egg yolks (keep whites for meringue)
- 1 can sweetened condensed milk
- ½ cup key lime juice
- 2 small baked pie shells, or 1 large baked shell
Ingredients for meringue:
- 6 egg whites
- ¾ cup powdered sugar
- ¼ teaspoon cream of tartar
Instructions:
- in small bowl, beat the egg yolks until lemon colored (about 5 minutes)
- add the condensed milk and key lime juice
- mix well
- fold in 6 teaspoons of meringue mixture
- pour into baked pie shell(s)
- spread meringue on top
- brown in a 325 °F (165 °C) oven for 10-15 minutes
- Watch carefully after 10 minutes, as it can brown fast!
Instructions for meringue:
- beat until stiff, but still moist: 6 egg whites
- while beating, add (1 tablespoon at a time) the powdered sugar and cream of tartar [Christine Dörenberg]
