- cooked lobster tail or cooked large shrimp
- mango slices (fresh preferred)
- maple syrup
- finely ground sweetened coconut
- tabasco sauce (hot red pepper sauce)
- wine vinegar
- heat maple syrup in sauce pan, and reduce until thick
- add drop of tabasco sauce to taste
- add small amount of coconut
- add small amount of wine vinegar
- line bottom of small ramekin with mango
- put slice of lobster tail on top
- drizzle the thick sweet-sour maple sauce over it
