- 1 cup (240 ml) corn meal (yellow)
- 5 tablespoons sugar
- 3 teaspoons baking powder
- ½ teaspoons salt
- 1¼ cups (300 ml) milk
- 1¼ cups (300 ml) flour
- 1 egg
- ¼ cup (4 tablespoons, 60 ml) melted butter
- blend the liquid ingredients into the dry ingredients
- do not over mix!
- bake in greased muffin pan (or greased 8 inch square pan)
